MONSTER BROWNIE BARS
I posted these on instagram and they got a few rave reviews! So they need a permanent spot here. These are flourless and technically gluten free & dairy free, but you may never know it. These are lower in sugar by using cacao powder for the chocolate flavor, sweetened with 100% pure maple syrup. The ooey gooey texture reminds me of brownies my mom made when we were growing up!

• 1c creamy peanut butter
• 2 eggs
• 1/2c coconut sugar
• 1/2c maple syrup
• 1tbsp coconut oil, melted and cooled
• 1tsp vanilla
• 2tbsp cocoa (or cacao) powder
• 1/2tsp baking soda
• 1/4tsp salt
• 1/4c rolled oats
• 1/3c chocolate chips
• 1/4c Valentines themed M&M’s for topping

Preheat your oven to 350f.
Prepare your 8x8 baking dish with spray oil or parchment paper.
In a large bowl, combine wet ingredients.
In a separate bowl, combine dry ingredients (except for M&M’s).
Add dry ingredients to wet ingredients and mix until well combined. Fold in chocolate chips.
Pour the batter into your prepared baking dish. It will be thick and sticky but I spray a rubber spatula with spray oil so it’s easier to smooth out.
Top with M&Ms.
Bake for about 24 minutes. Let cool, cut into 9 bars and enjoy!

This recipe takes a few pantry staples, and if you don’t have them, they are easy to find! Cacao/cocoa powder work the same way in this recipe, and you can substitute maple syrup for honey if you choose.

This batter is one of my favorites! It’s so rich like a fancy brownie, but it is made of some good ingredients. I love that the consistency also replicates a traditional brownie batter.

I like to line a baking dish with parchment paper because that’s my best tip for a guaranteed no-stick baked good, but if you don’t have it, spray oil may work just the same. I topped these brownies with lot’s of M&M’s to make them “monster” brownies, but feel free to leave them plain!

These brownies are done when a knife or toothpick comes out clean, or the edges start to look like they are getting crispy or a little hardened. You know, those brownie edges we either love or hate!
