HARVEST SALAD

This seasons featured recipe is my Harvest Salad! This salad is so delicious, from the roasted sweet potatoes, to the rice and the homemade dressing. Don’t sleep on the dressing - it makes this recipe so tasty.

I recommend serving this with grilled chicken or grilled salmon. It saves well in the fridge for a few days and makes enough to feed a few people!

  • Prep Time: 15 minutes

    Cook Time: 25 minutes

    Total Time: 40 minutes

    • 3 medium sweet potato, chopped small

    • 3c chopped kale

    • 1c cooked jasmine rice

    • 1/3c veggie broth

    • 1/3c raw pumpkin seeds

    • salt & pepper to taste

    1. Cook rice according to package instructions.

    2. Once you've cut the sweet potato, saute in olive oil for about 8-10 minutes until a fork can almost pierce through.

    3. Add broth and shredded kale.

    4. Once kale starts to wilt, add rice & dressing and stir to mix together.

    5. Once salad is all mixed together, add pumpkin seeds & serve with dressing! Enjoy!

    • 2 tbsp olive oil

    • 1 tbsp maple syrup

    • 1 tbsp balsamic reduction

    • 1 tsp dijon mustard.

      Whisk all ingredients together until well combined.
