White Wine Roasted Sausage, Peppers & Potato

This one pan meal is easy, delicious and comes together with little work. I added the white white for a flavor boost, but if you don’t drink wine, you can simply leave this out and add in another tbsp of olive oil.

  • 2 tbsp olive oil

    1 large white onion, sliced thin

    2 red bell pepper, sliced thin

    1 lb baby potatoes, washed and halved

    12 sweet sausage links, poke with fork a few times

    8 oz white wine

    To taste: salt and pepper

    1. Preheat the oven to 400 F.

    2. Slice peppers and onions, cut potato in half and poke sausages with a fork.

    3. Add all ingredients to a bowl and mix well to coat with olive oil.

    4. Dump all ingredients into a roasting pan or sheet pan in one layer.

    5. Roast for 30 minutes.

    6. Remove from the oven, pour in wine and toss with sausage and vegetables.

    7. Cook for another 20 minutes, or until sausage is browned and potatoes are fork tender. Enjoy!

  • To start, preheat your oven to 400f. The prep work is simple here: slice peppers and onions, cut potatoes in half and poke sausages with a fork 2-3 times. Toss all ingredients in olive oil, and a little salt and pepper. Add all ingredients to a pan. Roast for 30 minutes.

 
  • Once your meal is roasted for 30 minutes, remove and pour white wine over the pan. Toss a little to make sure it is evenly distributed. Return to the oven for 20 minutes.

    If you are not adding wine, toss with 1 tbsp olive oil and return to the oven for 10 minutes.
